I made this recipe on Monday night- it was SO GOOD!  I thought I was making enough so that we'd have leftovers but Jeff and I ended up polishing it off that night.  There are a few random items- but once you've bought them- you can make it on a whim!

Sweet and Spicy Stir Fry with Chicken and Broccoli
Ingredients:
3 cups broccoli florets
1 tablespoon olive oil
2 skinless, boneless chicken breast
halves - cut into 1 inch strips
1/4 cup sliced green onions
4 cloves garlic, thinly sliced

I added carrots, mushrooms, mini corn and water chestnuts- you can use any protein and veggies you want.

Sauce:
1 tablespoon hoisin sauce
1 tablespoon chile paste
1 tablespoon low sodium soy sauce
1/2 teaspoon ground ginger
1/4 teaspoon crushed red pepper
1/2 teaspoon salt
1/2 teaspoon black pepper
4 cloves garlic, thinly sliced
1/8 cup chicken stock

In a wok or similar pan, start with olive oil, garlic and your
protein.  Saute until fully cooked.  Add any veggies- like carrots that need extra time to cook.  In a separate bowl, combine ingredients for sauce.  Add sauce and remaining vegetables.  If you end up needing extra sauce to coat your ingredients add a bit of chicken stock and
soy sauce.  Cook until mixture is hot. 
Serve over rice.  If you don't like spice- cut back on the crushed red pepper.
